| APPLESAUCE CAKE
(Submitted by Sybil Haney) 1 cup sugar 1/3 cup shortening 1 ½ cup applesauce ½ cup pecans 3/4 cup raisins 2 cups self-rising flour 1 tsp soda 1 tsp cinnamon 1 tsp all-spice ½ tsp salt Preheat oven to 350°. Cream shortening and sugar. Add applesauce. Sift flour, soda, salt and spices. Add to mixture. Add raisins and nuts. Pour into tube pan. Bake for 35 minutes or until done. Ice with powdered sugar cream icing. |
Rice and Cream of Chicken
(Submitted by Frank Emigh, so simple and easy and oh so good)
2 1/2 Cups of Water 1 cup of Rice 1 Family Size (26oz) can of Cream of Chicken Soup 1 Tablespoon of Butter or oil Bring water to a boil then drop in butter or oil and rice. Reduce heat to simmer and let simmer for 20 minutes. Remove from heat and stir in the soup. Serve

APRICOT NECTAR CAKE

Using Leftovers (Submitted by Frank Emigh) Mac and Cheese (about 2 - 3 servings) Baked Beans (about 2 - 3 servings) Sausage (1/2 to 1 lb) Crumple sausage into frying pan and fry until done, drain. Heat the left over Mac and Cheese and the Baked Beans and combine into a bowl. Stir in the drained sausage. Serve with toast, rolls or any bread you like. A wonderful way to use these two leftovers and a good one dish meal.

| BANANA CAKE
(Submitted by Sybil Haney) 3 CUPS PLAN FLOUR 2 TSP SODA DASH SALT 1 CUP SHORTENING 2 CUPS SUGAR ¾ CUP MILK 2 EGGS (BEATEN) 1 ½ CUP MASHED BANANAS CREAM SHORTENING AND SUGAR. ADD 2 TSP MILK. ADD EGGS AND BEAT. ADD FLOUR AND REMAINING MILK. FOLD IN BANANAS. BAKE AT 350 DEGREE FOR 25-30 MINUTES. FROSTING. 1 8 OZ CREAM CHEESE 1 BOX CONFECTIONERS SUGAR 1 TSP VANILLA 1 STICK BUTTER |

| Blueberry Crunch

Smoked
Sausage Casserole 3 or 4 Medium size Potatoes 2 Cans Whole Kernel Corn, drained 2 Cans Sweet English Peas, drained 1 Package Shredded Cheddar Cheese 1 Package Smoked Sausage In a 13 X 9 inch baking dish slice the potatoes and layer in the pan to create the bottom layer of the casserole. Pour the corn and peas evenly over the top of the potatoes. Slice the Smoked Sausage and lay the slices on top of peas and corn evenly spreading the slices over the layers. Bake uncovered at 350 degrees for 45 minutes to an hour (depending on how your oven bakes). Remove casserole from oven and sprinkle the shredded cheddar cheese evenly on the top, cover with foil lightly and let stand for about 20 to 30 minutes. Serve. This will serve approximately 4 people.

Breakfast Casserole (Submitted

Spam Casserole (Don't turn your
nose up at this until you try it, this is a really good dish)
3 or 4 Medium Sized Potatoes 1 Medium Onion 1/2 cup Velveeta Cheese (use more if you like) 1/2 cup Shredded Cheddar Cheese (use more if you like) 1 can of Spam Line the bottom of a 13 X 9 inch baking dish with 1/2 of the potato slices. Slice onion thinly and spread 1/2 of it on top of potatoes. Layer half of the Velveeta and cheddar cheese on top of the sliced onions and potatoes. Repeat, creating another layer of potatoes, onion and cheeses. On top of the two layers slice the spam and cover the layers as completely as you can. Sprinkle the remaing cheeses on top. Bake at 350 degrees for 45 minutes to an hour. Remove from oven let stand for about 20 to 30 minutes. Serve. Serves about 4 people. |

| CREOLE CAKE
(Submitted by Sybil Haney) 2 EGGS 2 CUPS SUGAR ½ CUP OIL 2 TBSP COCOA ½ CUP BUTTERMILK 1 TSP SODA ½ TSP VANILLA 2 CUPS SELF-RISING FLOUR 1 CUP BOILING WATER MIX ALL TOGETHER. ADD WATER LAST. BAKE AT 350 DEGREE FOR 30 - 50 MINUTES IN A 11 X 16 PAN. FROSTING: 1 STICK BUTTER 1 BOX BROWN SUGAR 1 CAN COCONUT (SMALL) ½ CUP NUTS 1 SMALL CAN PET MILK 1 TSP VANILLA BOIL UNTIL BUBBLY. POUR ONTO TOP OF CAKE. ( I PUNCH SEVERAL HOLES IN THE CAKE BEFORE I POUR THE FROSTING) THIS MAKES THE CAKE MOIST. |

Meatloaf: (Submitted

In large mixing bowl break up the ground chuck in small pieces. Stir in the tomato sauce, eggs, onion, and Dale's sauce. A little at a time, mix in the Quaker Oats to bring the mixture to a pliable texture, you may have to add a little more or less oats to get the mix to a texture that is firm enough to pick up with your hands (but not hard). Place mixture in casserole dish and bake at approximately 350o for about 1 to 2 hours. (The heat and time will depend on your oven) I have found that this is better if cooked slowly. As you take the dish out of the oven, pour the tomato catsup on top of the meat loaf and lay the American Cheese slices on top. Let it set for just a few minutes to absorb the flavor of the catsup and the cheese softens. NOTES: It really is important to use ground chuck or ground round. Velveeta cheese is good on top also instead of the American Cheese slices. Do not season with salt or pepper while it is cooking, salt will pull the moisture out of the meat and it will be too dry. |

gatherings) 2 8-COUNT CANS CRESCENT ROLLS 1 EGG BEATEN 16 OUNCHES CREAM CHEESE, SOFTENED 1 CUP MAYONNAISE 1 ENVELOPE RANCH SALAD DRESSING MIX ½ CUP FINELY CHOPPED CAULIFLOWER ( I USUALLY USE 1 CUP) ½ CUP FINELY CHOPPED BROCCOLI (I USUALLY USE 1 CUP) ½ CUP FINELY CHOPPED MUSHROOMS ( I USUALLY USE 1 CUP) ½ CUP FINELY CHOPPED GREEN BELL PEPPER ( I USUALLY USE 1 CUP) ½ CUP FINELY CHOPPED TOMATO( I USUALLY USE 1 CUP) ¾ CUP SHREDDED CHEDDAR CHEESE ( I USUALLY USE 1 CUP) UNROLL CRESCENT ROLL DOUGH. SPREAD IN 10 X 15 INCH BAKING SHEET, SEALING PERFORMATIONS. BRUSH WITH EGG. BAKE AT 375 DEGREES FOR 11 TO 13 MINUTES OR UNTIL LIGHT BROWN. COOL. BEAT CREAM CHEESE, MAYONNAISE AND SALAD DRESSING MIX IN MIXER BOWL UNTIL SMOOTH. SPREAD OVER BAKED LAYER. SPRINKLE WITH NEXT 5 INGREDIENTS. TOP WITH CHEESE. CHILL 2 HOURS. CUT INTO 1 X 1 ½ INCH PIECES. YIELD: 96 SERVINGS. |
